FIELD: food industry.
SUBSTANCE: invention relates to the food industry; it is intended for the protection of cheese surface from mold formation. A method for preparing an antimicrobial preparation for coating cheeses using sorbic acid provides for the administration of a saturated solution of sorbic acid in ethyl alcohol into the excess amount of water at the intensive mixing, while in a water-alcohol solution, a fine-dispersed suspension of sorbic acid is formed.
EFFECT: method allows for increasing the efficiency of protective properties of sorbic acid.
