FIELD: storage technology.
SUBSTANCE: invention relates to vegetable storage technology and can be used to store fresh cauliflower. The method for storing fresh cauliflower includes processing cauliflower before storing it with an electromagnetic field of extremely low frequencies at a frequency of 38-40 Hz and magnetic induction of 3-6 mT for 3-5 minutes.
EFFECT: reduction in the loss of cauliflower weight by 9.2-9.4%, as well as a reduction in the loss of vitamin C by 20.7-21.0% and vitamin K by 18.2-18.3% compared to the known method for storing cauliflower.
