SUBSTANCE: invention relates to the meat industry and can be used in the production of meat products. A method for the production of liver pate is proposed, involving the preparation of minced liver, mixing with prescription ingredients, forming long loaves, heat treatment and cooling, and pork liver is used as the main raw material, whole pieces of which are pre-soaked in cavitation-treated 2% concentration brine before grinding table salt for 60-120 minutes, depending on the mass of the pieces, after which they are blanched in boiling water for 7-10 minutes, crushed and mixed with prescription ingredients.

EFFECT: invention provides improvement of organoleptic characteristics, quality and biological value of the finished product, as well as expansion of the range of pâtés based on pork liver with improved consumer characteristics.
