FIELD: fat and oil industry.
SUBSTANCE: method for increasing the quality of food oils or fats includes following stages: a) supply of food oil through equipment for oil refining under vacuum, and addition of distillate substance to an oil flow in such a way that oil comes into contact with distillate substance, and reduction in a content of hydroperoxides and/or volatile substances in oil, and b) collection of refined food oil after the stage a). Moreover, refining equipment includes a stripper with a nozzle and no more than one plate for oil collection, while the stripper is characterized by a specific load by oil from 0.5 to 4.0 kg/m2·h. The stripper has the ratio of height to diameter from 0.1 to 10. The use of refining equipment including the stripper with a nozzle and no more than one plate for oil collection is described, wherein the stripper is characterized by a specific load by oil from 0.5 to 4.0 kg/m2·h, and it has the ratio of height to diameter from 0.1 to 10, for decomposition of products of oxidation of triglycerides, diglycerides, monoglycerides, and/or fatty acids.
EFFECT: invention allows for reduction in a content of hydroperoxides and volatile substances in oil.
