FIELD: fat and oil industry.
SUBSTANCE: method for the production of refined oil having a reduced content of glycidyl ester and hydroperoxides differs in that it includes effect on food oil of following stages: a) a whitening stage; b) a deodorizing stage; c) a stage of re-whitening of deodorized oil, and d) an additional refining stage. Moreover, the additional refining stage d) is carried out by passage of whitened food oil obtained at the stage c) in vacuum through equipment for oil refining, consisting of a steaming column with a nozzle and no more than one tray for oil collection. At the same time, the steaming column has oil load from 0.5 to 4.0 kg/m2h of a nozzle surface. The use of refining equipment consisting of the steaming column with the nozzle and no more than one tray for oil collection, where the steaming column has oil load from 0.5 to 4.0 kg/m2h of the nozzle surface, for reduction in the content of hydroperoxides and volatile substances in refined, whitened, deodorized, and re-whitened food oils is also described.
EFFECT: invention allows for obtainment of refined oil with acceptable taste and with very low levels of composite esters of 2- and 3-MCPD and/or glycidyl ester.
