SUBSTANCE: invention relates to the field of nanotechnology, medicine and agriculture. To obtain nanocapsules of the violacein pigment, violacein in an alcohol solution in the presence of a glycerol ester with one or two molecules of edible fatty acids and one or two molecules of citric acid as a surfactant is added to a suspension of kappa-carrageenan in cyclohexane and mixed at a speed of 700 rpm. min within 40 min. The resulting suspension of nanocapsules is filtered off and dried at room temperature. The pigment violacein is used as the core, and kappa-carrageenan is used as the shell of nanocapsules at a core/shell mass ratio in nanocapsules of 1:3, or 1:1, or 1:2.
EFFECT: invention makes it possible to simplify and speed up the process of obtaining nanocapsules, to reduce losses during their production, to protect the pigment from discoloration when exposed to sunlight, to obtain stable aqueous dispersions of violacein.
