FIELD: foodstuffs.
SUBSTANCE: invention relates to the food industry, namely, to the production of chickpea flour from chickpea seeds. The initial chickpea seeds are pre-crushed into flour on a hammer crusher with a circumferential velocity of 65 m/s. The intermediate products of chickpea crushing are subjected to finishing crushing on roller machines with fluted rollers with the flutes arranged tip to tip, with a rotation speed of the fast roller of 6.0 m/s, with the ratio of circumferential velocities of the fast and slow-rotating rollers of 2.5, with the fluting density of the rollers of 10 pieces per 1 cm, with a slope of the flutes of 10%. The products of chickpea crushing are sorted using a flour sieve No. 36/40 PA with a nominal hole size of 180 mcm.
EFFECT: invention provides at least a 91% total output of chickpea flour, i.e. ensures the development of an effective technology for producing chickpea flour while preserving the native properties thereof for use in the baking, pasta-making, and confectionery industries, in order to improve the consumer properties and expand the range of finished products.
