FIELD: meat processing industry.

SUBSTANCE: invention relates to the technology of manufacturing semi-finished minced meat products from raw materials of animal origin, and can be used in meat processing plants and public catering establishments. The following is proposed: a method of production of chopped semi-finished products from lamb, which includes preparing and grinding raw meat — lamb, preparing minced meat by mixing chopped raw meat with fresh onions, fresh garlic, kelp powder, pumpkin cake, curdlan stabilizer, dried thyme, ground black pepper, salt cook, kneading the minced meat for 5–8 minutes at a temperature not exceeding 11–15°C with subsequent cooling of the minced meat in the refrigeration chamber at a temperature of 0°C to 4°C for 4–6 hours, forming semi-finished products by filling prepared minced meat with natural casings and their subsequent storage in either chilled or frozen form, using the following ratio of initial components, wt.%: 90.0 of lamb; 2.8 of fresh onions; 1.0 of fresh garlic; 1.7 of kelp powder; 2.0 of pumpkin pulp; 1.1 of Kurdlan stabilizer; 0.6 of dried thyme; 0.5 of ground black pepper; 0.3 of table salt.

EFFECT: invention is expanding the range of products, increasing the organoleptic quality indicators, nutritional and preventive value of the target product.
