FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of alcohol-free non-carbonated beverage, and may be used in alcohol-free industry, as well as in production of special food for people with alimentary-dependent diseases. Disclosed is a method for the production of a non-carbonated alcohol-free beverage, in which preliminarily prepared, by mixing glucose-fructose syrup, clarified tomato juice, basil extract and culinary food salt, blending syrup is added with softened water with hardness of not more than 0.7 mg⋅eq/l to volume of 100 dal, then the mixture is stirred and filtered, the beverage is prepared at the following ratio of ingredients per 100 dal: clarified tomato juice – 330-660 l; culinary food salt – 0.025-0.035 kg; basil extract – 8-10 l; glucose-fructose syrup – 70-75 l; softened water – the rest up to 100 dal.
EFFECT: invention allows to increase the quality of the non-alcoholic beverage by improving the organoleptic properties, to intensify the process by reducing the duration of the ready product preparation for the preservation of biologically active substances and energy resources, to obtain a non-alcoholic beverage, which can be consumed by a wide range of consumers, including people with alimentary-dependent diseases and prone to allergic reactions, to expand the range of alcohol-free products.
