FIELD: nonalcoholic industry, in particular, production of kvass. SUBSTANCE: composition contains taste-and-flavor base which includes artificial, natural and identical natural flavorings taken separately or in combination. For each flavoring at least one component is separated from the group containing kvass wort, rye or barley malt, natural honey, mint infusion, apple or thyme extract, caraway, shredded horseradish, raisin and grape. The composition also comprises edulcorant in the form of artificial and/or natural sweetener, citric acid, carbon dioxide and water. The ingredients are taken in the following ratio, kg/1000 dal of prepared product: taste-and-flavor base, 0.01-55.0; edulcorant, 0.1-93.5; citric acid, 0.5-4.0; carbon dioxide, 4.15; water, the balance. The composition additionally has caramel color, edible solvent and sodium benzoate in the amount of 0.177 kg/1000 l of prepared product.
