SUBSTANCE: table mustard contains following components and in following ratio, mas.%: ground mustard, 180-189.5; vegetable oil, 40-41.7; sugar, 140-142.9; salt, 20-20.4; acidic acid as converted to 80% concentration, 20-20.4; apple paste, 200-210.3; clove, 0.3-0.31; cinnamon, 0.3-0.31; water, the balance up to 1000. Ready mustard retains its characteristics of hot flavor and aroma and possesses specific tints which are not characteristic for known grades of mustard and it allows for widening range of producing table grades of mustard. EFFECT: higher efficiency.
