FIELD: agriculture. SUBSTANCE: method involves subjecting fruit or vegetable to hydraulic cooling with saturated solution containing water, propionic acid and chitosan in an amount not exceeding 0.2 wt%; charging fruit or vegetable into temperature-controlled room for further storage. Method provides postharvest treatment of fruit or vegetable prior to laying for storage. EFFECT: provision for reliable storage of fruit or vegetable by stimulating their natural immune reactions.
