FIELD: alcoholic beverage industry. SUBSTANCE: production of vodka called "Petrovskaya sloboda" (Peter's district) consists of following operations. Alcohol-water solution (assortment) is prepared in such way as to obtain 40% vodka from high-purity rectified ethyl alcohol and corrected drinking water. Thus obtained assortment is thoroughly agitated and, after adjustment its strength, pumped into pressure tank and from there into coal-treatment battery. Velocity of assortment filtration achieves 40 dal/h for fresh coal and 30 dal/h for regenerated coal. Filtered vodka is poured into adjustment tank, into which apple vinegar and sodium bicarbonate dissolved in softened water are added at thorough stirring. After addition of all ingredients into adjustment tank, vodka is thoroughly agitated and its concentration is checked. If the latter is deviated from standard, vodka is adjusted in the same tank by adding either alcohol or water followed by agitation and checking strength. Finished vodka is subjected to control filtration and bottled. Following ingredients are present, per 1000 dal: special biologically-active additive 0.1-0.3 kg, sodium bicarbonate 0.1-0.2 kg, and 0.1-0.3 l of apple vinegar (the rest being water-alcohol liquid).
