METHOD OF VODKA PRODUCTION Russian patent published in 2002 - IPC

Abstract RU 2182169 C1

FIELD: liqueur and vodka industry. SUBSTANCE: method involves preparing an aqueous-spirituous solution by mixing rectified ethyl alcohol "Ekstra" with purified drinking water to obtain the proof value 40% followed by its thoroughly stirring and passing through the carbon refinery battery at the rate of filtration up to 40 dal/h for fresh carbon and up to 30 dal/h for regenerated one. The prepared vodka is fed into finishing tank. Fructose and lactose are dissolved in purified water, solutions are mixed and wheat bran is added to a mixture and kept for 30-40 min. The content of finishing tank is stirred, proof value is corrected, the kept mixture is added and fed to the control filtration and bottling. Ready vodka has the following ratio of components per 1000 dal: fructose, 4.5-5.5 kg; lactose, 0.4-0.6 kg; wheat bran infusion of the 1-st blend, 4.5-5.0 l; rectified ethyl alcohol "Ekstra" and purified drinking water as measured to obtain the proof value 40%. Invention involves the combined use of components and procedures of the method and provides the synergetic effect of components and procedures of the method that involves keeping a mixture of lactose and fructose with wheat bran infusion. This results to not only acceleration of extraction of biologically active complex but to intensive mass-exchange and assimilation. Also, in the presence of the bran enzyme complex the taste of fructose and lactose is softened and refined. Also, addition of this seasoned mixture after correction of the proof value provides the additional feeding an aqueous-spirituous medium with the fresh complex of biologically active components and under these conditions organoleptic indices of vodka are formed finally and the content of deleterious impurities (methanol and fusel oils) is decreased to minimal level. Vodka is enriched with the complex of biologically active substance of bran and easily assimilable sugars. Vodka is enriched with proteins, lipids, lignin, starch, enzymes, amino acids and easily assimilable sugars. EFFECT: improved method of production, expanded assortment of high-quality biologically active vodkas. 1 tbl
