FIELD: food-processing industry.
SUBSTANCE: baking oven has housing and cart mounted for entry into baking oven and withdrawal therefrom. Heat-concentrating members are located on cart carrier surfaces. Faces of heat-concentrating members define baking surface. Heat-insulating members arranged at end sides of cart are adapted for closing of charging opening of baking oven, when cart is fully introduced into baking chamber or withdrawn therefrom.
EFFECT: uniform heat distribution in baking oven and uniform baking of dough.
