FIELD: liqueur and vodka industry.
SUBSTANCE: vodka comprises the following components per 1000 dal of ready product: natural honey, 2.0-3.0 kg; sodium hydrocarbonate, 0.2-1.2 kg; lactulose concentrate "Lazet", 2.0-3.0 kg; an aqueous-alcoholic infusion of wheat crunching bran with calcium "Lito" of the first blend, 5.0-6.0 l; sugar syrup of the concentration 65.8%, 11.0-12.0 l; rectified ethyl alcohol "Ekstra" and purified drinking water, the balance, to provide strength 40%. Proposed vodka allows increasing the content of biologically active substances and calcium by 1.5% comprising in bran with calcium, to reduce its toxicity by 30% due to using lactulose concentrate. Also, invention improves organoleptic and physicochemical indices of the ready product due to using sodium hydrocarbonate that moderates vodka taste and shows effect on its alkalinity and calcium also. Vodka shows mild taste and barely detected aroma and barely detected milk caramel after tasting on background of vodka aroma taste score - 9.65.
EFFECT: improved and valuable properties of vodka.
