FIELD: food-processing industry, in particular, aromatization of chewing gum.
SUBSTANCE: method involves mixing cellulose material having hydroxyl groups with multifunctional carboxylate; solving resultant mixture; providing thermal processing of mixture at temperature of at least 120 C for at least 4 hours for producing of matrix; introducing aromatizer into matrix. According to one version, chewing gum composition contains aromatizer releasing structure making 0.1-5% by weight of chewing gum. According to other version, chewing gum composition also contains aromatizer releasing structure making 0.1-5% by weight of chewing gum, however, matrix is formed on the base of aqueous solutions of hydroxypropyl cellulose and multifunctional carboxylate cross-linking agent. Method for producing of chewing gum composition with prolonged aromatizer releasing time involves mixing cellulose material containing hydroxyl groups, with water; drying water from cellulose material; providing thermal treatment thereof for at least 6 hours at temperature of at least 125 C for forming of matrix; introducing aromatizer into resultant matrix.
EFFECT: prolonged action of aroma and enhanced intensity thereof in chewing gum compositions.
