FIELD: food industry.
SUBSTANCE: invention relates to sauces production technology. Prepared extraction cake of pumpkin seeds and vegetable marrow mixed with drinking water and held to swell. At a recipe ratio, mixing with cherry plum puree, plum puree, quince puree, sugar and salt. Obtained mixture is boiled out until dry substance content is about 22 %. Adding dill seeds, coriander, red hot pepper, extract of birch leaves. Packing, sealing and sterilisation.
EFFECT: use of method reduces taste of pumpkin seeds in product.
