FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to technology of producing sauces. Method for producing fruit sauce comprises soaking ground pumpkin seeds extraction cake in drinking water and maintenance for swelling, it is followed by mixing the pumpkin seed extraction cake, cherry plum, plum, quince puree, sugar and salt, produced mixture is then cooked till the content of dry substances is about 22 %, followed by adding dill seeds, coriander and red hot pepper. Sauce is then packed, delivered for sealing and sterilisation to produce an end product. Composition is additionally added with CO2-extract of birch leaves, CO2-extract of currant leaves, turn berry puree and vegetable marrow seed extraction cake. Components are taken at the specified weight ratio.
EFFECT: invention enables to reduce taste of pumpkin seeds in sauce in comparison to a prototype and maintain low adhesion of sauce to container walls.
