SUBSTANCE: invention relates to food industry, namely to sauces production technology. Fruit sauce production method envisages pouring potable water and maintenance for swelling ground pumpkin and vegetable marrow seed extraction cakes, mixing with cherry-plum puree, plum puree, quince puree, sugar and salt. Then mixture is boiled till dry substances content is nearly 22 % and then dill seeds, coriander, red hot pepper, CO2-extracts of birch leaves and currant leaves are added. Ready product is supplied for canning, sealing, and sterilization.

EFFECT: proposed method for fruit sauce production ensures reduction of smack of pumpkin seeds in ready product without changing its adhesion properties.
