FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to sauces production technology. Ground pumpkin and vegetable marrow seeds extraction cakes are poured with potable water and maintained for swelling, mixed with cherry-plum puree, plum puree, quince puree, sugar and salt. Then produced mixture is boiled till dry substances content is nearly 22 % seeds of dill, coriander, and red hot pepper are added, packed, sealed, and sterilized.
EFFECT: invention allows to reduce smack of pumpkin seeds in sauce without changing its adhesion properties.
