FIELD: food industry.
SUBSTANCE: invention relates to food product for babies or baby formulae and method of their production. Proposed method comprises processing by catalytic hydrogenolysis to remove groups R mixture of at least two compounds selected from a group comprising compounds of general formulae 1 and 2 and their salts by catalytic hydrogenolysis to remove group R.
R1 is independently fucosile or H; R2 is selected from N-acetyl-lactosamyle and lacto-N-biozile groups, where N-acetyl-lactosamyle group may carry glycosyl residue which contains one or more N-acetyl-lactosamyle and/or one or several lacto-N-biozile groups. R3 is H or N-acetyl-lactosamyle group. Any N-acetyl-lactosamyle and lacto-N-biozile group can be substituted with one or more sialyl and/or fucosile residues. R4 is independently sialyl or H. At least one from R1 or R4 is not H in general formula 2.
EFFECT: amount of the mixture of said compounds are selected so that the said mixture of oligosaccharides human milk has oligosaccharide profile, in fact, similar to the profile of beestings, transient breast milk and mature breast milk.
