FIELD: food industry.
SUBSTANCE: invention is intended for usage during moulding of a frozen aerated product, for example, ice-cream. The moulding method envisages a stage of the mould cavity filling with a frozen aerated product through the filling means. The mould cavity represents an indentation in the mould surface. The mould surface temperature is below 0°C. The filling means has a tail-piece contacting the mould surface; one supplies ice-cream into the mould cavity through the said tail-piece. A thermal insulation covers the tail-piece. The insulation is made of a material having thermal conductivity less than 2 Wt m-1 K-1.
EFFECT: filling means is heated using the heating means located downstream before the thermal insulation.
